Now that Skeeter is older and can entertain herself a little more, cooking dinner has become something I enjoy again. I’m working on trying out new recipes and ideas.
This one was a hit in the BUB household this week, so I’m sharing.
Also? This is my disclaimer: I’d literally never cooked fish before this try. I am not by any means a fish expert. I just gave it a try and it seemed to work.
What you need:
(1) package of Hawaiian rolls
(1) lb Salmon (I used frozen)
(1/2 cup) Panko bread crumbs
(1) bell pepper
I thawed my salmon by putting it in the fridge the night before. By the time I was ready to make dinner, it was mostly thawed.
Then I sliced the bell papper and cut the salmon into chunks. I threw it all in the food processor and ran it until the pepper was chopped and the salmon was all cut up.
I mixed in the egg and panko bread crumbs, adding more crumbs until it was holding together.
I formed small patties with my hands (which feels totally gross).
I warmed a pan on the stove and sprayed it with olive oil.
I threw a few on at a time and cooked them until they were brown on both sides.
I then mashed the avocado and mixed it with some ranch dressing for a little flavor.
From there, it’s just assembling the sandwiches!
