Last week, we had a cold front come through. It was glorious- I pulled my sweaters out of storage, wore sweatpants around the house, and started looking up soup recipes.
Of course, I live in Texas, so when I say "cold front," I mean it was 70 degrees. But don't you dare try to steal my thunder.
When I cook, I tend to look at a bunch of recipes and then do my own thing. There's a restaurant nearby that makes the best broccoli cheese soup. Since they only serve it once a week, it's been a while since I've gotten my fill. So I decided to try my hand at it- and it was good.
Here's what you'll need:
1 onion, diced
1/4 cup butter
12 oz evaporated milk
1/4 cup flour
32 oz chicken broth
10 oz frozen broccoli
2 cups sharp cheddar cheese
12 oz Velveeta
Now, let's get started!
Add the butter and diced onion to a pan and cook until the onion is translucent.
Pour in the evaporated milk and stir. Cook for about a minute, then add the flour. Mix thoroughly, then pour the whole mixture into your handy dandy crock pot.
Add the chicken broth and broccoli. Salt and pepper.
Now, the next part is very tricky, so read carefully...
Turn on your crock pot and leave. Maybe go shopping. Or pick up a good book and a glass of wine. Or watch Dirty Dancing for the billionth time.
I let mine cook on low for 4 hours, but my crock pot runs hot. I imagine the average crock pot would need 4-6 hours on low.
By now your house smells glorious. You'll be tempted to dip your spoon in the crock pot and try it as is. But don't- you're about to add cheese. This is going to get so much better.
Pour in your grated sharp cheddar and cubed Velveeta. Go ahead and eat some of the Velveeta. You've worked hard today, so the calories don't really count.
Go ahead and give your toddler some Velveeta too. She is YOUR child after all, so she lives for cheese.
Mix it all up and let the cheese melt. Now taste it and decide if you need any more cheese. Ha. Of course you need more cheese. I really like cheese, okay?
Now grab yourself a ladle and a crusty piece of bread. Cuz it's time to chow down.
