Tortellini Soup

I came across this recipe a couple months ago in The Pioneer Woman's websiteDuh.  Where else?  And I knew I needed to try it asap.  It was delish.  And so easy to make!  Here are the steps:

Ingredients:

  • 1 Tablespoon Olive Oil
  • 2 cloves Garlic, Minced
  • ½ whole Small Onion, Minced (about 1/4 Cup)
  • ½ teaspoons Dried Oregano
  • 1 quart Low-sodium Chicken Broth (or Vegetable Broth)
  • 15 ounces, weight Canned Whole Tomatoes
  • Salt And Freshly Ground Black Pepper
  • 9 ounces, weight Package Tortellini, Any Variety, Fresh Or Frozen
  • 3 cups Fresh Spinach, Chopped And Loosely Packed
  • Parmesan Cheese, To Serve
Heat the olive oil over medium heat while you chop the onion and garlic.  Add the garlic and onion and cook until the onions are clear and the garlic is golden (about 5 minutes).



Add the broth (I used vegetable).



Stir in the tomatoes and oregano.  Salt & Pepper to taste and bring to a boil.



Sip your glass of sangria while you wait for it to boil.



Add the tortellini and cook according to the package instructions.




About a minute before the tortellini is done cooking, add the spinach.



Stir and let it cook for a minute.



 Remove from heat quickly so the tortellini won't overcook.

Serve with some fresh garlic bread.

Okay, so clearly I just had a bad experience with the Katy Perry Black Shatter. Maybe I'll try it on my toes next time.

This soup looks great! I haven't made any pioneer woman recipes, but I follow her blog. Any other favorites you could share? I'm looking for low cal...
